Easy pumpkin muffins are a must for fall to start for my family. One of my favorite memories is making these muffins with my Nana. They are so easy. Plus, they are great for taking to gatherings, last-minute family get-togethers, or having something quick in the morning! You can also hide the pumpkin so picky eaters can try something new in a safe, fun way. I hope your family enjoys these as much as mine does.

Easy Pumpkin Muffins for a treat!
Stepping back into regular life can be a hard thing to do. I remember offering to bring a snack on Tuesday to a Co-op, then stressing for the next week about what I could take. It had to be something I could eat without worrying but still had to appeal to the picky eaters I was with friends.
Thankfully it was fall! Which meant it was pumpkin spice time! Most everyone likes pumpkin spice and/or chocolate! There was my solution, so I made 100 chocolate mini muffins the Monday before. That’s a lot. Somehow by the end of the day on Tuesday, I had none left! No one knew there was pumpkin in it. From then on, anytime I was asked to bring something, my friends always wanted me to bring mini muffins. 😛
Chocolate Heaven!!
So I hear you like chocolate for breakfast, a snack, or something sweet after dinner. Lucky for you, this can have as much chocolate as you want! Whether it’s dark chocolate [My personal favorite!], milk chocolate, or white chocolate, YOU CAN DO THEM ALL! If you want less chocolate, no worries, don’t add it. This recipe can adapt to whatever you want. Add a twist. We want to see what you all come up with!
The Story of the Ugly Muffin
I totally suggest overfilling the muffin tins on these! Because they have limited rising agents to counteract the bulk of the pumpkin, they will pretty much stay the same size as the amount of batter you put in each one. That’s great for making lots of mini-muffins, but they are not gonna rise a bunch and become gorgeous. If you don’t smooth the tops and shape them, you will have some UGLY muffins! See the picture of Red Velvet Anything Muffins below for an example!
Adding a Cinnamon Twist
Cinnamon is such an incredible spice! I’m going to fan girl for a second; prepare yourself. In the middle ages, cinnamon was initially imported from Egypt by Arabian traders who got it from ancient Ceylon. It became a favorite flavor in many banquet foods and was regarded as an appetite stimulator, a digestive, and a treatment for coughs and sore throats. Anyway, this can easily make anything more desserts much tastier! Whether it’s for a last-minute holiday gathering or an excellent on-the-go breakfast. Adding a cinnamon twist is always so fun.
The Mighty Mini
I love to make tiny things! If it’s a mini version of anything, I will make it. As I mentioned above, I made 100 mini muffins in a day which sounds insane! In reality, every mini cupcake pan [if it’s the bigger small one] can make 24 at a time. So with some quick math, if you do the same pan five times, you already have 120. News flash, you might want to eat less in one sitting. But, mini does mean you can have more than one. :]
Bountiful Big Boy muffins
Not liking the idea of having that many tiny muffins, but don’t sweat it. Big muffins are great too! They will have more carbs, but they will fill you up faster. You can add more things on the top, more chocolate and cinnamon, or OoOoOo, you could add MINT ON CHOCOLATE AND HAVE A MINT CHOCOLATE CHIP MUFFIN!!!!!! That would be awesome. With bigger muffins, you have many different options to choose from!

“Anything” Easy Pumpkin Muffins
Equipment
- 1 medium size bowl
- 1 spoon
- 1 or more cupcake pan
- cupcake liners
Ingredients
- 1 15 oz can of pumpkin
- 1 box of cake mix any kind/flavor
- baking spray
Optional Ingredients:
- 1/2 cup Semi-sweet Chocolate Chips Sugar-free chocolate chips work too!
- 1 tbsp Pumpkin Pie Spice
Instructions
- Preheat oven to 350
- Put cupcake liners in pan
- Spray pan and cupcake linersbaking spray
- Open can of pumpkin and add to bowl1 15 oz can of pumpkin
- Add cake mix and combine well1 box of cake mix
Optional Ingredients:
- Whatever you choose! Just add to the batter before putting it in the cupcake tins!
*IMPORTANT STEP*
- Evenly distribute batter between liners and smooth tops. The way the muffins look in the tin is very close to the way they will look after baking!
Bake
- Bake mini muffins for 10 minutes Bake regular muffins 14 minutesBake jumbo muffins for 17 minutes
- Let cool and Enjoy! :]
