"Anything" Easy Pumpkin Muffins

"Anything" Easy Pumpkin Muffins are soft, moist, decadent muffins for any time of day!

Equipment

  • 1 medium size bowl
  • 1 spoon
  • 1 or more cupcake pan
  • cupcake liners

Ingredients
  

  • 1 15 oz can of pumpkin
  • 1 box of cake mix any kind/flavor
  • baking spray

Optional Ingredients:

  • 1/2 cup Semi-sweet Chocolate Chips Sugar-free chocolate chips work too!
  • 1 tbsp Pumpkin Pie Spice

Instructions
 

  • Preheat oven to 350
  • Put cupcake liners in pan
  • Spray pan and cupcake liners
    baking spray
  • Open can of pumpkin and add to bowl
    1 15 oz can of pumpkin
  • Add cake mix and combine well
    1 box of cake mix

Optional Ingredients:

  • Whatever you choose! Just add to the batter before putting it in the cupcake tins!

*IMPORTANT STEP*

  • Evenly distribute batter between liners and smooth tops. The way the muffins look in the tin is very close to the way they will look after baking!

Bake

  • Bake mini muffins for 10 minutes
    Bake regular muffins 14 minutes
    Bake jumbo muffins for 17 minutes
  • Let cool and Enjoy! :]

Notes

Mix in chocolate chips, pumpkin pie spice, sugar-free white chocolate chunks...whatever you like... into the batter before adding it to the cupcake liners. Create your own version with your favorite additions. Just remember to re-calculate the carbs!
Flavor enhancers and different cake mixes can be used, such as chocolate chips in chocolate cake mix, cinnamon in a white or yellow cake mix for pumpkin spice, or sugar-free white chocolate chips with a red velvet mix! Yum! Add anything you like! Hence the name  "Anything" Easy Pumpkin Muffins ;P 
Just remember to re-calculate the carbs! Our nutrition info is for a plain, vanilla cake mix with no extra goodies involved!
